The Vegan Omega-3 Pankcake

Are you looking for a nutritional packed breakfast that’s full of natural ingredients that will keep you energized before or after a long workout? Than this is the perfect meal for you.

The Omega-3 Pancake

  • 1/4 cup Whole Wheat Flour (unbleached)
  • 1 tsp Chia Seeds
  • 3 tsp Flax Meal
  • 2 tsp Hemp Seeds
  • 3 tsp shredded Organic Coconut
  • 2 tsp of Chopped Mint
  • about 1/2 tsp Baking Powder
  • less than 1/2 tsp Baking Soda
  • around 1/2 cup Unsweetend Vanilla Almond Milk (Trader Joes brand)
  • small cap full of Organic Vanilla Extract
  • optional flavor** 1 tsp of Cinnamon or 1 tsp of Lavender Buds20150401_072537

I put all the dry ingredients into a glass measuring cup and then I stir in the almond milk, add the extract and then I pour onto a medium hot pan. I wait till the one side is golden brown and I flip it. When its done I add Trader Joes flax& chia seed peanut butter over the pancake (1tsp) then I drizzle organic honey over the top (1tsp).

Enjoy with a cup of hot tea and a side of fruit.
